RECIPE FOR OVERNIGHT OATS:
Ingredients:
- 1/3 cup oats (I prefer quick-cooking steel cut oats like Bob’s Red Mill)
- 1-2 teaspoons chia seeds
- 1 tablespoon almond butter
- 1/4 cup wild blueberries
- 1/2 cup nut, oat or coconut milk (or a little more if you want more liquid)
Directions:
Add ingredients to a container (such as a mason jar), and refrigerate overnight. Eat them cold in the morning.
*Note: if you use steel cut oats, make sure they are the quick-cooking kind. If you use normal steel cut oats, the oats won’t absorb the milk overnight. Alternatively, you could use rolled oats or quick-cook rolled oats. I prefer the quick-cook steel cut version as it has a lower glycemic index and slows the conversion of starches to sugar in the body.
